INGREDIENTS
4 strips bacon
1 large white onion
A few stalks celery
2 envelopes of Lipton onion soup mix
Minced red chili pepper (optional, and if you do
… remove the seeds!)
Small can Hunt’s tomato sauce
1 large can vegetarian refried beans
1 medium can great northern white beans
1 cup dry red wine
Medium pasta shells or elbow macaroni (3 large
handfuls)
8 cups of water (or more for thinner soup)
Olive oil

TO MAKE IN LARGE POT
Stack 4 strips bacon, slice into small strips
Chop onion, chop celery
Pepper
May also add minced red chili pepper if desired
(remove the seeds!)
Fry and mix above in small amount of olive oil
until onions turn clear and add 8 cups of water and
Lipton soup mix

Bring to boil, add refried beans – stir until smooth,
reduce heat.
Add tomato sauce
Add pepper (no salt)
Add pasta or macaroni
Cook slowly – partially covered pot
Add 1 cup dry red wine and great northern white
beans
Finished when pasta/macaroni is cooked
Salt to taste
Serves 6 to 8
Prep time 30 to 40 minutes
