Scarpetta
Scarpetta, in Italian, means “little shoe,” or the
shape bread takes when used to sop up every last bite. And you’re bound to do
just that at Scott Conant’s Italian eatery, a hit not just in Vegas, but in New
York, Miami and Beverly Hills, as well. Both rustic and haute, Scarpetta is
rich in modern interpretations of Italian classics. Sample light appetizers
like tuna susci with marinated vegetables and preserved truffles,
followed by house-made pasta — go for simple spaghetti in tomato sauce with
basil, or smoked ricotta casonei with pistachios and poppy seeds — all
of it, simply sublime.
